The recipe is called Cucumber Pohe Or Kakdi Pohe. We are all familiar with the traditional Maharashtrian dish Kanda Pohe. There is another lesser known variety of this dish that is cooked in a few Maharashtrian homes called Dadpe Pohe. While making Dadpe Pohe, the rice flakes (Poha) are not cooked but are kept raw which are then flavored with Fodni or Tadka. The recipe we’re sharing with you, Kakdi Pohe, is a healthy twist to the dish of Dadpe Pohe.
Without further ado, let's take a look at the recipe of Kakdi Pohe.
Ingredients:
1 Bowl Rice flakes/Poha (thick variety)
½ bowl grated Cucumber
For Fodni/Tadka - 2 tsp oil, Mustard seeds, Turmeric, Hing powder, and green chillies as per preference
1 tablespoon Roasted Gram
Sugar, Salt, Coriander, Lemon juice as per preference
Procedure:
Mix the Rice flakes, grated Cucumber, Roasted Gram, Sugar, Salt, Coriander and Lemon juice in a bowl.
Heat oil and add Mustard seeds, Turmeric, Hing powder, and green chillies.
Add this Fodni/Tadka to the above mixture and mix everything well.
Garnish with Coriander leaves.
There you go! Kakdi Pohe is ready to be served!

When a Carbohydrate source (Rice flakes) is combined with Fiber (Cucumber in this case), it lowers the Glycemic index of that dish. Glycemic index is the value assigned to food, on the basis of how quickly or slowly the blood sugar increases. Eating food with a low glycemic index helps in maintaining blood sugar, aids weight loss and also helps in lowering the cholesterol level in our body.
Some people complain of Rice flakes causing acidity. Adding Cucumber to the Rice flakes helps in reducing acid secretion and soothe the stomach. \
Cucumber is a rich source of water which helps in keeping the rice flakes moist and palatable.
Cucumber adds an interesting flavour to the dish than the usual taste of onion and tomato.
