1. Tondlyacha Bharit


Ingredients:

  • 200gm Tondli or ivy gourd

  • Roasted peanut powder

  • Salt to taste

  • 2/3 green chillies

  • Ghee

  • Dahi

Procedure:

Boil the Tondli in a cooker. Once boiled, pour it in a bowl and mash it well. Add roasted peanut powder as per your preference. Sprinkle some salt over it. Lastly, add Dahi to the bowl and mix it properly. Keep it aside. In the meantime, heat up some Ghee in a pan. Add Jeera and green chillies to the Phodni. Pour this Phodni all over the mixture and done! Your salad is ready!


2. Gajarachi Koshimbir


Ingredients:

  • 2 grated carrots

  • Roasted peanut powder

  • Salt to taste

  • Lemon juice

  • Coriander

  • Oil

  • Mohri

  • Jeera (optional)

  • Asafoetida

  • Curry leaves

  • Green chillies

  • Turmeric

Procedure:

Pour the grated carrots in a bowl. Add roasted peanut powder in this bowl. Sprinkle some salt over it. Pour lemon juice and add coriander in this mixture. Mix it well and keep it aside. Heat some oil in a pan. Add Mohri, Jeera, Asafoetida, curry leaves, green chillies, and turmeric once the pan’s heated. Pour this Phodni to the salad and mix it once again. There you go! The salad’s ready.


3. Mulyacha Raita


Ingredients:

  • 1 grated radish

  • Salt to taste

  • 1/2 Green chillies

  • Chat masala (optional)

  • Sugar

  • Dahi

Procedure:

Pour the grated radish in a bowl. Add salt, green chillies, chat masala, sugar, and Dahi in the mixture. Yes, that’s all it takes! This salad requires minimal ingredients, efforts, and time to make compared to the earlier two recipes.
