Soup it up!!


Currently, It's raining heavily in many parts of the country. Unfortunately, many of us have been forced to stay put at our respective homes. Since we're all locked up inside our home, naturally, there is an urge to have steaming hot food. It's the perfect weather to bring in a cup of Masala chai or some refreshing soup and enjoy them while it pours down the street.


During the rains, soups are a wonderful option that you can have with your meal or during your snack time. They are super-nutritious, tasty and also more importantly filling. So, we're sharing with 4 easy-to-make soup recipes that you can have to make your rainy day complete.






These soups are:

- Low calorie

- Do not contain corn flour, starch or any cream

- Easy to digest

- Made with no fancy ingredients

- And easy to make


1. Anti-oxidant rich red Soup


Ingredients:

½ Beetroot, 1 Carrot, 1 Tomato, ½ Potato, 1 tsp ghee, Cinnamon, Clove, Salt and Pepper


Procedure:

1. Add 1 tsp ghee, cinnamon, clove, and sauté all the vegetables

2. Add water and cook until the vegetables are soft

3. Let it cool down and then blend it in a mixer

4. Heat the soup again and add salt and pepper as per taste



2. Vitamin A rich Pumpkin Soup


Ingredients:

1 bowl of sliced Pumpkin, ½ Onion, 2-3 pods Garlic, Cumin seeds, 1 tsp ghee, Red chilli powder, turmeric, salt


Procedure:

1. In a cooker, add 1 tsp ghee, Jeera and sautéd Onions and garlic

2. Add sliced pumpkin and pressure cook it.

3. Let it cool down and then blend it in a mixer

4. Heat the soup again, add some turmeric powder, red chilli powder and salt to taste



3. Green gram or moong soup with buttermilk (Kalan)


Ingredients:

1 Cup Sprouted Green gram (Moong), 1 tsp oil, Mustard seeds, Hing, Turmeric, red chilli powder, salt to taste and ¼ cup Buttermilk


Procedure:

1. Pressure cook the sprouted Moong with little water

2. In a seasoning vessel, heat oil and add Mustard seeds, Hing, Turmeric

3. Add the above mixture to the cooked moong.

4. Add buttermilk, salt, red chili powder, and serve. No need to reheat.



4. Bottle gourd/Dudhi Soup


Ingredients:

1 bowl sliced bottle gourd, 2-3 pods Garlic, ½ Cumin seeds, ½ inch Ginger, 1 tsp oil, 1 Green chilli

Procedure:

1. In a cooker, add 1 tsp oil, finely chopped Ginger, green chilli, and Garlic

2. Add the sliced bottle gourd and pressure cook it.

3. Let it cool down and then blend it in a mixer

4. Heat the soup again, add salt and serve.



- Do not strain the soups. Maintain the fibre intake

- You can garnish the soups with coriander which will add extra flavour and make it more nutritious

- If you enjoy a bit tangy flavour, you can squeeze a lemon. It will add Vitamin C to your soup and also improve the absorption of vitamins and minerals present in the vegetables
